Palisade Peaches

PEAR OR PEACH FILLED COFFEE CAKE

Ingredients (Cake):
1 1/2 cups flour
1 cup sugar
2 teaspoons baking powder
2 teaspoons grated lemon peel
1/8 teaspoon salt
1 cup butter or margarine softened
4 eggs
1 29-ounce can of pear or peach halves

Ingredients (Topping):
1/2 cup melted butter
1 cup flour
1/4 cup sugar
1 Tablespoon grated lemon peel

Directions (Cake):
Preheat oven to 350 degrees. Grease a 13x9 inch pan. Measure the flour, add the next 6 ingredients and beat until well blended. Spread the batter evenly in the baking pan. Arrange the fruit slices on top of the batter. Sprinkle the entire top with topping. Bake 45 - 50 minutes. Cut into rectangles to serve.

Directions (Topping):
In a small saucepan, melt butter. Stir in flour, sugar, and 1 grated lemon peel.


PEACH COOLER

2 ripe peaches
1/2 cup milk
1/4 cup water
1/4 cup sugar
8 ice cubes
1 Tablespoon maple flavoring

Blend in a blender and serve.


PEACH ICE CREAM
Compliments of Clark Orchards -- Palisade, Colorado

2 1/2 cups sugar
1 Tablespoon lemon juice
4 cups half & half
1 cup sweetened condensed milk
6 teaspoons vanilla
1/4 teaspoon almond extract
5 cups ripe and peeled pureed peaches
Whole milk

Mix all ingredients together and put into ice cream freezer. Fill to the FILL LINE with milk, in a 5 quart ice cream freezer.
